Ramadan is a holy month for Muslims around the world. It is a time of fasting, prayer, and spiritual growth. During this month, people fast from sunrise to sunset and focus on discipline, gratitude, and helping others.
After the month of fasting, Eid is celebrated as a festival of joy and togetherness. On this special occasion, many traditional dishes are prepared at home, and one of the most loved Eid desserts is Sheer Khurma.
Sheer Khurma is a rich and creamy sweet dish made with milk, vermicelli, and a generous mix of dry fruits like almonds, cashews, and walnuts. It is specially prepared during Eid and shared with family and guests as a symbol of happiness and celebration.
Vermicelli (Seviyan): 100 grams
Full-fat milk: 1 liter
Sugar: 100 grams (adjust to taste)
Ghee (clarified butter): 2 tablespoons
Dates (chopped): 8–10
Almonds (sliced): 10–12
Walnuts (chopped): 8–10
Pistachios (chopped): 10–12
Raisins: 2 tablespoons
Cardamom powder: ½ teaspoon
Saffron strands: a few (optional, soaked in 1 tablespoon warm milk)
Rose water or kewra water: 1 teaspoon (optional)
Roast Vermicelli:
Heat 1 tablespoon of ghee in a pan. Add the vermicelli and lightly roast on medium heat until golden brown. Keep aside.
Prepare Dry Fruits:
In the same pan, add the remaining ghee. Lightly fry almonds, cashews, walnuts, and raisins until golden. Add chopped dates and cook for 2–3 minutes. Set aside.
Boil Milk:
In a heavy-bottomed pan, bring milk to a boil. Reduce heat and simmer, stirring occasionally to prevent sticking.
Add Vermicelli:
Add the roasted vermicelli to the simmering milk. Cook on low heat for 8–10 minutes until the vermicelli becomes soft.
Sweeten and Flavor:
Add sugar and stir until dissolved. Mix in cardamom powder and soaked saffron for aroma and flavor
Add Dry Fruits:
Gently fold in the prepared mixture of almonds, cashews, walnuts, and raisins into the milk and vermicelli. Cook for another 5 minutes to allow the flavors to blend beautifully.
Final Touch:
Add rose water or kewra water, if using. Stir gently and remove from heat.
Serve:
Sheer Khurma can be served warm or chilled, garnished with extra chopped almonds, cashews, and pistachios on top. This creamy, nutty dessert is perfect for sharing with loved ones on Eid.
