Traditional winter-special Panjiri loaded with nuts, gond and the goodness of ghee!
- 1 cup whole wheat flour (atta)
- ½ cup ghee (clarified butter)
- ¼ cup gond (edible gum)
- ¼ cup chopped almonds
- ¼ cup chopped cashews
- 2 tbsp chopped pistachios
- 2 tbsp raisins
- 2 tbsp chopped walnuts
- 2 tbsp chopped dried figs
- 2 tbsp chopped dates
- ¼ cup desiccated coconut
- 1 tsp cardamom powder
- ½ cup powdered jaggery or sugar (adjust to taste)
Step 1: Fry the gond
- Heat 2–3 tbsp ghee in a pan.
- Add gond and fry on low flame until it puffs up.
- Roast for 2–3 minutes on low flame.
Step 2: Roast the dry fruits
- Add a little ghee in the same pan.
- Add almonds, cashews, pistachios, walnuts, figs, and dates.
- Roast for 2–3 minutes on low flame.
- Add raisins last and remove them once they swell.
Step 3: Roast the flour
- Add the remaining ghee to the pan.
- Add whole wheat flour.
- Roast on low flame for 10–12 minutes.
- Stir continuously until the flour becomes golden and aromatic.
Step 4: Combine everything
- Turn off the flame.
- Add roasted gond, dry fruits, flavoured nuts, and coconut to the flour.
- Let the mixture cool completely.
- Mix in jaggery/sugar and cardamom powder.
- Combine well.
