Ingredients to include:
- ¼ cup ghee / clarified butter
- 8 cashew
- 5 Chopped Almonds
- 2 tsp raisins
- 2 tsp dry coconut
- 2 pods cardamom/elaichi
- 4 cloves / lavang
- 1 cup water
- ¼ tsp saffron / Kesar
- ¼ tsp orange food color (optional)
- ½ cup basmati rice (soaked for 30 minutes)
- ½ cup sugar
Steps to prepare for Zarda :
- First, toast 8 cashews, 5 almonds, 2 tablespoons of raisins, and 2 tablespoons of dry coconut in a large kadai with 2 tbsp of ghee.
- On a low flame, roast until golden brown and set aside.
- Include 2 cardamom pods and 4 cloves in the remaining ghee.
- Also include 1/4 tsp. saffron, 1/4 tsp. orange food coloring, and 1 cup of water.
- Make sure to thoroughly combine the color.
- Add 1 cup of basmati rice that has been soaked for 30 minutes.
- 10 minutes of cooking with a cover over a medium flame.
- Make sure the rice is half cooked and gently combine.
- Add 12 cups of sugar, 2 tbsp ghee, and the roasted dry fruits after that.
- Mix gently, ensuring that the sugar melts.
- Five minutes of simmering undercover.
- Stir frequently to avoid burning.
- Cook the rice all the way through. likewise, avoid overcooking to prevent mushy rice.
- Serve the hot zarda pulao or meethe chawal garnished with a few chopped nuts.
